Our Ooh-La-Luscious French Toast: Recipes from Our Sustainable Cookbook
Another one of my favorite breakfast dishes is my take on french toast. I made this meal just the other morning and my son described it as eating a sweet, fluffy cloud. I love making french toast because it offers the carby, gooey sweetness of homemade pancakes without the hassles that making something from scratch can bring. All you do is combine the ingredients, dip each side of the bread in the mix, and cook. Easy, right? You can even substitute the ingredients to match your dietary needs (gluten free, vegan, etc) without sacrificing taste. We classify this meal as sustainable because you can use almost any leftover bread to make it. I've made this with french bread, white bread, and wheat bread, but my favorite thing to do is to use something like the loaf butts (you know, the pieces at the end that no one eats) because those thick, crusty pieces taste so good in this recipe. I feed these delectable pieces to my son and he doesn't even notice. Speaking of sweetness, this meal gets its flavor from two places. First, I make a cinnamon, brown sugar butter to spread on the french toast right after I cook it. Then, after I've let that richness melt a little, I drizzle on a layer of syrup or honey. This may seem like a lot, but I normally pair this with a yogurt and fruit to make sure we're getting a good balance of healthy and indulgent.

OOH-LA-LUSCIOUS FRENCH TOAST (Serves 3 with 2 slices of bread each)
6 slices of wheat bread
3 eggs
1/2 teaspoon vanilla flavoring or extract
1/8 teaspoon of salt
1/4 cup of milk
Whisk the eggs, vanilla, salt and milk together in a shallow dish. Take a piece of bread and coat each side with the egg mixture. Cook each side in a non-stick skillet on medium heat for approximately 1-3 minutes or until a toasty golden brown color. Repeat until all pieces of bread are cooked. Spread on butter, add syrup and enjoy!
BROWN SUGAR BUTTER SPREAD (OPTIONAL)
(Serves 1 teaspoon per slice of bread)
1/2 Cup Butter (Softened to Room Temperature)
1/4 Cup Light Brown Sugar 1/4 Teaspoon Ground Cinnamon
Beat ingredients together and chill before using. Stores in the refrigerator in an airtight container.
